So…. Use as many grains as possible..
Wheat flour, of course, bulgar, oat , corn meal,
Ground sunflower seeds, ground flax seed,
Then in case you’ve forgotten some wonderful exotic
grain, throw in a handful of the “7 grain “ mixture you can
find in the co-op bins to “perk and crunch” it up that little bit
more. As diverse a seed population as possible!
Oops, forgot, use a tiny bit of white flour too if it can help
bind the rest together.
Then important as well is getting the “Salty and Sweet” in
the right balance. So when you begin, you start with lots of
warm water then lob in lots of honey and about as much salt.
( Hmmm, reminds me of a feisty family argument or town
meeting when everyone gets to share the outcome) This
gets the yeast going to foment a great success!
The last part is to put it all together and kneed and kneed and kneed
Til it’s puffy and smooth and ready to rise-up and be
delicious and, once baking in its pans, fill the house with a
nourishing aroma of things to come!
